Chicken Fajitas

Just add salsa,tortilla chips and a drink

Ingredients

  • 1 c vegetable oil
  • 1/2 c lime juice
  • 1/2 c cilantro, chopped, fresh
  • 4 cloves garlic
  • 2 tsp salt
  • 1 1/2 tsp pepper
  • 12 skinned boned chicken breast halves, cut into strips.
  • 12 (6inch) flour tortillas
  • 1 avocado, peeled and sliced
  • 2 c (8oz) shredded Monterey Jack cheese
  • 1 red bell pepper, cut in strips
  • 1 yellow bell pepper, cut in strips
  • 6 romaine lettuce leaves
  • sour cream
  • salsa

Preparation

Step 1

Whisk together first 6 ingredients in a plastic bag-Add chicken. Marinate for 1-2 hours, turning occasionally.
Remove chicken from marinate. Discard marinate. Cook chicken with pepper strips until done. Serve with tortillas. avocado, cheese, lettuce sour creams and salsa.
