Ingredients
- 1/2 low-fat cottage cheese
- 1 TBL nonfat milk
- 4 scallions, white parts only, sliced
- 4-oz thinly sliced smoked salmon
- 1/4 C whipped cream cheese
- 1 TBL fresh lemon juice
- freshly grd. white pepper
- 2 lg english cucumbers
- 1 TBL chopped fresh chives
Preparation
Step 1
process cottage cheese & milk in food processor until smooth.
add all ingredients (including pinch of white pepper) except cucumbers & chives
process until smooth & creamy
refrig at least 1 hr or overnight
cut cucumbers into 3/4" thick rounds, discarding ends
using sm. spoon, scoop seeds & some of flesh out of each round to form sm. cup
fill each cup w/ abt. 2 tsp of salmon whip & sprinkle w/ chives
cover & refrig until ready to serve, up to 1 hr
