- 1 can sliced pineapple
- 1 cup rum
- 1 cup flour
- 2 eggs
- 1 cup bread crumbs
- 1 cup coconut, shredded
- 1 cup powdered sugar
- 1 cup oil
Preparation
Step 1
1.Drain pineapple juice from can and save for later.
2.Add rum to can and refrigerate.
3.In small bowl, whisk eggs and 1/2 cup pineapple juice.
4.In separate bowl, combine bread crumbs and coconut.
5.Cover each pineapple ring in flour, and dip into egg and coconut.
6.In another bowl, mix together powdered sugar and rum from pineapple can.
7.Fry coated pineapple rings in oil.
8.Allow to cool, and drizzle with rum-sugar glaze.
9.Serve and enjoy!
