Pineapple Upside-Down Cake...Scratch
- 1/2 cup brown sugar
- 1/4 cup butter, melted
- 1 can slice pineaplle
- 6 marachino cherries
- 2 cups flour
- 1 1/2 cups sugar
- 1/2 cup butter, softened
- 1 1/4 cups milk
- 2 tsp. baking powder
- 2 eggs
- 1/2 vanilla
Heat oven to 350.
Sprinkle brown sugar in bottom of pan.
Drizzle 1/4 cup melted butter over brown sugar. Place one pineapple slice in each of the indentions. Place one cherry in center of each pineapple slice.
In a large bowl, combine remaining ingredients. Blend on low speed 1 minute, scraping bowl often. Beat on high speed 3 minutes, scraping bowl occasionally.
Pour batter over pineapple. Bake for 50-55 minutes, until toothpick inserted in center comes out clean.
Immediately turn pan upside down onto serving plate.
