Ingredients

  • Tzatziki Sauce:
  • 4 boneless, skinless chicken thighs, fat trimmed
  • 2 tablespoons Homemade Greek Seasoning Mix
  • 2 tablespoons Olive Oil
  • 1 tablespoon red wine vinegar
  • 1/2 a large cucumber, peeled
  • 1 1/2 cups plain full-fat Greek yogurt
  • 2 large garlic cloves, finely minced
  • 2 Tablespoons extra virgin olive oil
  • 1 Tablespoon white vinegar
  • 1/2 teaspoon salt
  • 1 Tablespoon minced fresh dill
  • 2 Tablespoons fresh lemon juice
  • Homemade Greek Seasoning Mix:
  • 2 tablespoons basil, dried
  • 2 tablespoons dill, dried
  • 4 tablespoons garlic powder
  • 2 tablespoons, onion flakes
  • 4 tablespoons, oregano
  • 2 tablespoons parsley, dried
  • 2 tablespoons rosemary, dried
  • 1 tablespoon thyme
  • 2 tablespoons lemon pepper seasoning
  • 1 tablespoons marjoram
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 1 tablespoon cinnamon
  • 1 tablespoon nutmeg

Preparation

Step 1

Homemade Greek Seasoning Mix:

1. Mix all together.

2. Store in an air-tight container, preferably in a cool dark place.

Tzatziki Sauce:

3. Chop or grate the peeled cucumber very small, you can also pulse a few times in a food processor.

4. Mix in the Greek yogurt and stir to combine.

5. Mix in the minced garlic, olive oil, salt, vinegar, and lemon juice.

6. Chop the fresh dill and add to the yogurt mix.

7. Stir to combine and chill at until ready to serve.

8. Store in the refrigerator for up to a week.

Chicken:

9. Trim chicken and cut into nuggets.

10. Mix the Greek Seasoning Mix, olive oil, and vinegar in a bowl.

11. Add nuggets and toss.

12. Marinade for at least one hour, or overnight.

13. When ready to cook, preheat oven to 350F.

14. Place chicken nuggets on a foil-lined baking pan.

15. Bake for 25 minutes or until done in the middle.

16.Serve warm with Tzatziki Sauce, and pita bread.
