CHICKEN CACCIATORI

Ingredients

  • 1 – 3 lb. chicken cut-up
  • 1/2 cup flour
  • 2 – 3 tbsp. olive oil
  • 1 cup onions, chopped
  • 1 clove garlic, chopped
  • 1 14oz. tomato sauce
  • 1 cup canned tomatoes
  • 1/4 cup dry white wine
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. oregano
  • 1 bay leaf
  • 1 cup sliced fresh mushroom

Preparation

Step 1

Coat chicken pieces with flour, brown in olive oil over high heat. Remove chicken pieces and set aside. Add onions and garlic and sauté over medium heat until tender but not brown. Remove excess fat. Combine remaining ingredients, except for mushrooms, in a bowl. Return chicken to skillet and pour tomato mixture on top. Cover and simmer until sauce thickens and chicken is tender, about 45 min. Add mushrooms 15 minutes before end of cooking. Remove bay leaf and skim off excess fat. Serve with rice or noodles.
