BAKED CHICKEN PARMESAN

  • This dish can be baked ahead and reheated, covered at 350F for 15-20 min. until heated through.
  • 4 boneless skinless chicken breast
  • 1/2 all-purpose flour
  • 2 eggs, beaten
  • 1/2 - 3/4 cup bread crumbs
  • 1/4- 1/2 cup grated parmesan cheese, divided
  • 1 tbsp. vegetable oil
  • 2 tbsp. butter
  • 2 tbsp. all-purpose flour
  • 1-1/4 cups milk
  • 1/4 tsp. each of pepper, dried basil and oregano
  • 3/4 cup prepared tomato sauce (1 small can Hunts tomato sauce)
  • 1 cup grated mozzarella cheese

Preparation

Step 1

Pat chicken dry. Pound to flatten slightly
Dust chicken lightly with flour. Dip into egg. Combine breadcrumbs with ¼ cup of the Parmesan Cheese. Pat breadcrumb mixture into the chicken.
Brush with vegetable oil a 9x13 baking dish. Arrange chicken in the dish in a single layer. Bake in a preheated 400 F oven for 20 mins. Meanwhile, in a medium sized saucepan melt butter and whisk in 2 tbsp. flour. Cook, without browning, 3 mins. Whisk in milk. Bring to a gentle boil. Add pepper, basil, and oregano. Reduce heat. Cook 5 mins. stirring often.
Spread some of the creamy sauce on each piece of chicken. Drizzle with tomato sauce. Sprinkle with grated mozzarella cheese and remaining Parmesan cheese. Bake 15 to 20 mins. longer
