  • 8 oz macaroni 4 tsp salt
  • 5 tbsp butter,divided 2 cups bread crumbs
  • 1 cup parmigiano-reggiano cheese 1/2 medium onion
  • 2 tbsp all-purpose flour 2 cups milk
  • 1 cup heavy cream 2 cups shredded cheese,divided
  • 2 cups shredded Gruyere cheese 1/2 tsp ground mustard
  • 1/4 tsp ground red pepper 1/8 tsp ground nutmeg

Preparation

Step 1

Preheat oven to 375. Prepare macaroni in a 6 quart saucepan according to package directions, using 3 tsp salt. Drain ;set aside. Melt butter in a medium skillet over low heat;add bread crumbs and Parmigiano cheese;remove from heat and set aside. Cook onions in remaining 3 tbsp butter in a large saucepan over medium heat,3 to 4 minutes. Whisk i flour;cook1 minute. Gradually whisk in milk,cream and salt;cook stirring constantly,8 to 10 minutes until thickened.Stir in 1 1/2 cups cheddar cheese,Gruyere cheese and spices. Stir in pasta. Pour into buttered 9x13 in. baking dish;sprinkle with 1/2 cup cheddar cheese and bread crumb mixture. Bake 30 minutes until golden and bubbly.
