Blueberry Cream Flan

No one will ever guess this cheesecake-like dessert is made with yogurt.

Ingredients

  • Topping:
  • 1 1/2 cups all-purpose flour
  • 1/2 cup white sugar
  • 1 1/2 tsp baking powder
  • 1/3 cup butter, softened
  • 2 egg whites
  • 1 tsp vanilla extract
  • 3 cups blueberries, fresh or frozen (not thawed)
  • 2 tbsp all-purpose flour
  • 2 cups plain yogurt
  • 1 egg, lightly beaten
  • 2/3 cup white sugar
  • 2 tsp lemon zest
  • 1 tsp vanilla extract

Preparation

Step 1

In a food processor or mixing bowl, combine flour, sugar, baking powder, butter, egg whites, and vanilla. Mix well. Press into the bottom of a 10-in spring-form or flan pan and sprinkle with blueberries.

In a bowl, sprinkle flour over yogurt. Add egg, sugar, zest and vanilla. Mix well. Pour over blueberries.

Bake at 350 F for 30 - 35 minutes or until golden. Serve warm or cold.
