Chicken with Apricots and Almonds

Ingredients

  • 1 teaspoon cinnamon
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 2 teaspoons salt
  • 6 chicken thigh, boneless, skinless and sliced
  • 1 tablespoon olive oil
  • 1 cup dried apricots, sliced
  • 3/4 cup water
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/2 cup slivered almonds, toasted
  • basmati rice (4 cups)

Preparation

Step 1

In a large bowl, combine spiced and salt. Add chicken and toss to coat. Prepare basmati rice to be according to package directions, keeping in mind that chicken takes about 15 minutes to cook. Heat oil in a large skillet set over medium-high heat. Add chicken and cook, stirring, for 5 minutes. Add apricots and water and bring to a simmer. Cook for 5 minutes longer, stirring occasionally. Remove from heat. Stir in honey, lemon juice and almonds. Serve over prepared rice.
