Maple-Glazed Bacon-Wrapped Salmon on a Plank

Ingredients

  • 4 tsp (20 mL) PC 100% Pure Medium Maple Syrup
  • 4 tsp (20 mL) PC Old Fashioned Dijon Prepared Mustard
  • 2 tsp (10 mL) PC 100% Pure Safflower Oil
  • 1 pkg (280 g) frozen PC Applewood-Smoked Bacon Wrapped Atlantic Salmon Skinless Fillets

Preparation

Step 1

Soak PC Cedar Grilling Plank in cool water for 4 hours, weighing down to keep submerged. Prepare spray bottle of water in case of flare-ups.

Preheat barbecue with one side on high heat and other side on low heat

Whisk together syrup, mustard and oil. Brush half of glaze all over frozen salmon.

Remove plank from water; place smooth-side-down on hot side of grill 1 minute.

Turn plank over; place on low heat side of grill.

Place salmon portions on plank, spacing evenly apart. Close lid and cook 15 minutes (keep lid closed entire time).

Open lid; rotate plank while still keeping on low heat side.

Brush salmon with remaining glaze. Close lid; cook another 10 minutes or until salmon is golden, caramelized and flakes apart easily.

Transfer salmon to serving platter and place plank in bucket of water.
