Ingredients
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup chopped basil
- 1/2 cup chopped fresh mint
- 1/2 cup chopped fresh chives
- 4 cups chopped fresh cucumbers
- 1 1/2 cups fresh corn kernels

Step 1
1. In a large bowl whisk together lemon juice, olive oil, and 1/2 teaspoon each salt and black pepper. Stir in herbs, cucumbers, and corn. Cover; chill at least 1 hour. Season with salt and pepper. Makes 10 servings.
