Ingredients
- 3 extra large egg yolks
- 1 tablespoon Dijon mustard
- 1 teaspoon fine sea salt
- 1 tablespoon lemon juice
- 1 1/2 cups canola oil
- Water, as needed to thin sauce
Preparation
Step 1
Combine the yolks, mustard, salt and lemon juice in the bowl of an electric mixer (see Note). Beat on medium-high speed until the mixture is smooth.
With the mixer running, slowly begin to add the oil, starting with 1 tablespoon at a time. Allow the oil to incorporate with the yolks before adding more. Scrape down the sides occasionally, if needed.
Once the mayonnaise starts to thicken, begin adding the oil in a slow, steady stream. If the mayonnaise becomes too thick, thin out by whisking in a little bit of water.
Once all the oil has been added, taste and adjust seasonings, if desired.
