Pumpkin Dessert Cake

Ingredients

  • Cake:
  • 1 1/4 cups oil
  • 4 tsp vanilla
  • 1 cup honey
  • 1 cup molasses or sugar
  • 4 eggs
  • 2 cups pumpkin (or 1 15-ounce can)
  • 1/2 cup wheat germ
  • 2 cups whole wheat flour
  • 1 1/2 cups white flour
  • 2 tsp baking soda
  • 2 tbsp cinnamon (tsp??)
  • 2 tbsp nutmeg (tsp??)
  • 2 tsp ginger
  • 2 tsp ground cloves
  • 1/4 tsp salt (optional)
  • Frosting:
  • 3 oz. cream cheese
  • 6 tbsp butter
  • 1 tsp vanilla
  • 1 tbsp milk
  • 2 cups powdered sugar

Preparation

Step 1

Combine oil, vanilla, honey, molasses or sugar, eggs and pumpkin. Combine wheat germ, whole wheat flour, white flour, baking soda, cinnamon, nutmeg, ginger, cloves and salt. Mix until blended. Mix all together until blended.

Pour into 2 greased bread pans. Bake at 350 F 1 hour or baking in 9x13 for 35 min. Can also drop onto cookie sheet. Bake 10 min.

Frost when cool.

Frosting: Cream cheese, butter, vanilla, milk and powdered sugar.
