Flank steak

for BBQ season, marinated for up to 24 hours. Be sure to cut across the grain to serve.

Ingredients

  • 2-3 lb. flank steak
  • 3/4 cup dry red wine
  • 1/2 Worchestershire sauce
  • 2 Tbsp. Whiskey
  • 2 Tbsp. Tomato paste
  • 1/4 cup brown sugar
  • 2 Tbsp. minced garlic
  • 1/2 tsp.ground ginger
  • 1 tsp. each salt and pepper
  • Coarse salt

Preparation

Step 1

Mix all ingredients except coarse salt in a bowl. Pour over meat or in zip-lock bag to marinate. Refrigerate at least 4 hours up to 24 hours. Remove steak from marinade and pat dry. Pour marinade into a sauce pan. Rub both sides with coarse salt. Preheat grill and grill steak about 6 minutes on each side for rare. While steak cooks, bring marinade to a boil and simmer until thickened, about 10 minutes. Cut steak into thin diagonal slices and serve with sauce on the side.
