Ingredients
- 1 cup biscuit baking mix
- 1 tsp dried oregano
- 1 tsp seasoning salt
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1 tsp dried parsley
- 1/3 cup grated parmesan cheese
- 1/2 cup grated onion
- 4 eggs, beaten
- 1/3 cup vegetable oil
- 1 zucchini, sliced into rounds
- 1 tomato, sliced

Step 1
Preheat oven to 350 degrees F. Grease a 9 by 9-inch casserole dish.
In a large bowl combine biscuit mix, oregano, seasoning salt, garlic powder, salt, parsley and parmesan cheese. Stir in onion, eggs and oil. Mix well and add zucchini. Pour into prepared dish. Layer tomatoes over top.
Bake in preheated oven for 30 to 35 minutes, or until cooked through and golden brown. let cool for 5 minutes before slicing.
