Easy Banana Cake

Family favorite - easy and delicious (starts with a cake mix!). This cake is sooooo moist. Also makes wonderful cupcakes.

Ingredients

  • CAKE
  • 1 box yellow cake mix
  • 2 c. mashed bananas
  • 1 c. vegetable or canola oil
  • 4 eggs
  • FROSTING
  • 1-1/2 boxes confectioner’s sugar (more if you want stiffer frosting)
  • 1 8-oz cream cheese (room temperature)
  • 1 stick melted butter
  • 1 c. pecans (need more if you are going to decorate the side of the cake as shown in picture).

Preparation

Step 1

CAKE:
Put all ingredients in large bowl. Mix as directed on cake mix package.

I usually divide equally into three round cake pans (greased and floured), but can also do cupcakes, rectangular -- whatever your preference.

Bake at 350 for 30 min (or as directed on package).

COOL before frosting.

FROSTING:
Mix cream cheese until smooth. Add sugar and butter until blended.
OPTION: You can either add pecans into the frosting, or my preference is to front the cake, then pat chopped pecans into the side of the cake.
