Easy Banana Cake
Family favorite - easy and delicious (starts with a cake mix!). This cake is sooooo moist. Also makes wonderful cupcakes.
- 1 box yellow cake mix
- 2 c. mashed bananas
- 1 c. vegetable or canola oil
- 4 eggs
- 1-1/2 boxes confectioner’s sugar (more if you want stiffer frosting)
- 1 8-oz cream cheese (room temperature)
- 1 stick melted butter
- 1 c. pecans (need more if you are going to decorate the side of the cake as shown in picture).
Put all ingredients in large bowl. Mix as directed on cake mix package.
I usually divide equally into three round cake pans (greased and floured), but can also do cupcakes, rectangular -- whatever your preference.
Bake at 350 for 30 min (or as directed on package).
COOL before frosting.
Mix cream cheese until smooth. Add sugar and butter until blended.
OPTION: You can either add pecans into the frosting, or my preference is to front the cake, then pat chopped pecans into the side of the cake.
