Breakfast Casserole

Ingredients

  • 1 Tbsp. olive oil
  • 1 lb frozen hash browns
  • 1/2 lb turkey sausage, browned
  • 1/2 cup grated Monterey Jack cheese
  • 4 lg eggs
  • 1/2 cup half and half
  • 1 tsp. salt
  • pinch black pepper

Preparation

Step 1

Preheat oven to 375°. Heat the oil in large skillet over medium heat Brown the hash browns, flipping them once, about 3 minutes on a side.

Mold the potatoes in a 9 inch pie plate. Layer the sausage on top of the potatoes, then add he cheese. In a separate bowl, whisk together the eggs, half and half, salt and pepper. Pour over the cheese layer.

Bake for 35-40 minutes until cooked through.

Note: The hash browns do not need to be fully cooked before placing them in the pie plate, and slightly undercooked potatoes will make for a firmer crust.
