Chicken & Rice Casserole

Ingredients

  • 2 cups long grain rice (boil 5 mins)
  • 1/2 cup celery
  • 1 small onion sauté with celery
  • Cook and then cube 3 or 4 chicken breasts
  • Mix in 1 tin mushroom pieces (drain)
  • 1 tin consommé
  • 1 tin cream mushroom
  • 1 tin chicken & rice soup

Preparation

Step 1

You may omit the chicken & rice soup and when cooking your chicken breasts, add 1/2 cup rice and a bit of celery and use chicken stock instead,
Mix all together and cook in oven for 1 hour. Cover casserole. About 15 minutes before this is cooked, uncover and top with potato chips.
