Cornbread Salas

Ingredients

  • 1 box Jiffy cornbread mix
  • 1 can whole kernel corn, drained
  • 1 can pinto beans, rinsed and
  • drained
  • 1 cup shredded cheddar cheese
  • 4 large tomatoes, diced
  • 1 green, yellow or orange pepper
  • 1 small onion, diced
  • 6 slices bacon
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 pkg. Hidden valley ranch dressing (dry mix)

Preparation

Step 1

Bake the cornbread according to package directions. Cool and crumble.
Cook bacon, cool and crumble.
Mix together diced tomatoes, pepper and onion.
Make dressing. Make sure you use Hidden Valley Ranch Original dressing, not the dip.

In a large bowl,layer
1/2 of cornbread crumbles
1/2 of corn
1/2 of pinto beans
1/2 of tomato mixture
1/2 of cheese
1/2 of crumbled bacon
1/2 of dressing

Repeat layers except bacon which you will sprinkle on top of dressing.
