Meatloaf

Ingredients

  • 2 tsp olive oil
  • 1 onion, chopped
  • 2 lb ground beef, lean
  • 1 egg
  • 1 T Dijon mustard
  • 1 T Worcestershire sauce
  • 1/2 tsp hot red pepper
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 cups breadcrumbs (or much less of Italian Dry, until not too sticky)
  • 2 T chopped parsley
  • TOPPING
  • 1/4 cup ketchup
  • 1 T Dijon mustard

Preparation

Step 1

1. Mix ground beef with all ingredients.
2. Add in the bread crumbs until not too moist.
3. Bake covered with foil, 350 degrees for 45 minutes.
4. Remove the foil.
5. Combine the ketchup and mustard for topping.
6. Spread topping on meat loaf.
7. Cook uncovered for 25 minutes longer.
8. Cool 10 minutes before serving.
9. Enjoy.
