Coffee Cake, Rhubarb

Ingredients

  • 2-1/2 c. all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 c margarine
  • 1-1/2 c. sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 c. milk
  • 2 c. rhubarb, finely cut
  • Cinnamon and sugar

Preparation

Step 1

Sift together first three ingredients in one bowl. Cream margarine and sugar. Add egg and vanilla. Add creamed mixture alternating to dry mixture with milk. Mix well. Fold in rhubarb. Sprinkle with cinnamon and sugar. Bake in 9X13 inch prepared pan at 350 degrees for 40 minutes.
