Rhubarb Cake

Ingredients

  • Topping:
  • 1 1/2 c brown sugar
  • 1/2 c margarine
  • 1 egg
  • 1 c sour milk (add 1 t lemon juice to make)
  • pinch salt
  • 2 c flour
  • 1 t vanilla
  • 2 c rhubarb diced
  • 1 t soda in water
  • 1/2 c brown sugar
  • 1 t cinnamon

Preparation

Step 1

Mix first 6 ingredients. Add clour and vanilla. Fold in rhubarb and pour into 9x13 pan. Put on topping and bake at 350 for 30 - 35 minutes. Serve topped with whipped cream or vanilla ice cream.
