Rainbow Jello

This is a really fun recipe, but you need to plan ahead because it does take some time and you also need to have a flat space cleared in your freezer....if that is possible.

Ingredients

  • 6 small package of Jello: I usually use, lemon, lime, orange, cherry, black raspberry and black cherry.
  • 2 cups plain or vanilla yogurt

Preparation

Step 1

Start with the lemon Jello. Dissolve in one cup boiling water. Divide in half (1/2 cup each) In one half, mix 1/3 cup of the yogurt and stir with wire whisk until smooth. Pour the plain lemon Jello into a 9x13 inch clear glass pan; tipping the pan to make sure that this first layer of Jello covers the whole pan. Let set up for 10 minutes in freezer. Remove from the freezer and carefully pour on the lemon/yogurt mixture, again tipping the pan to move the liquid all over the top of the first layer. Put back in the fridge for 10 minutes. You have now created the first 2 layers of this Jello dish. Repeat with all the other flavors of Jello. Always doing the clear layer first then the yogurt/Jello layer second. But you want to end with a clear layer.

When all layers are done, let set up in the fridge for at least an hour before trying to cut into squares to serve.

You can do this recipe in many different layers. You can do it all in pink or blue layers for baby showers. Or red and green layers for Christmas. Or orange and purple layers for Halloween. It always tastes great! Have fun.
