Chicken Garlic Pizza

A flavorful and unique chicken pizza that doesn't use a traditional tomato sauce base. Recipe makes 1 large 16" pizza.

Ingredients
- 2 boneless chicken breasts
- 1/2 cup sliced green onions
- 2 cloves garlic
- 2 tablespoons white vinegar
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon crushed red pepper
- 1/4 teaspon pepper
- 1 tablespoon cornstarch
- 1/2 cup fresh spinach leaves
- 1/2 cup sliced marinated or plain artichokes (canned)
- 1 cup shredded cheese (Monterey jack, mozzarella, or cheddar)
- 1 large pizza shell

Preparation
Step 1
Preheat oven to 400 degrees.
1.Slice raw chicken.
2. Combine onion, garlic, vinegar, soy sauce, oil, and both peppers; mix, then add chicken and marinate for 10 minutes.
3. Take chicken out, save marinade. Cook chicken in second taablespoon oil about 3 minutes.
4. Add 1 tablespoon cornstarch to marinade, add marinade to chicken until it thickens (about 1 minute).
5. Spoon marinade and chicken onto pizza shell, top with spinach leaves, marinated artichokes, and cheese.
6. Bake at 400 for approx. 12 minutes, or until cheese is slightly browned.
