Raspberry Pinwheels

Ingredients

  • 8 oz. cream cheese
  • 1/3 cup sugar
  • 2 tsp lemon juice
  • 2 tsp vanilla extract
  • 1 tsp lemon zest
  • Puff pastry, thawed
  • Raspberry jam
  • 12 fresh raspberries
  • Egg wash
  • Sanding sugar

Preparation

Step 1

Combine cream cheese, sugar, lemon juice, vanilla, and lemon zest in a bowl.
Blend ingredients well with an electric hand mixer. Set aside.
Lightly flour a work space, and roll out puff pastry. Cut evenly into squares.
Lay squares on greased baking sheet.
Add a spoonful of cream cheese mixture to the center of each square. Top with a spoonful of raspberry jam, and 3 fresh raspberries.
With a pastry cutter, cut from each corner to the center of the pastry square. Repeat with each square.
Fold every other flap into the center and press into place for a pinwheel shape. Repeat with each square.
Paint pinwheels with egg wash and dust lightly with sanding sugar.
Bake 18 minutes at 400 °F.
Serve warm and enjoy!
