Ingredients
- 3 Tbsp. Butter
- 3 onions, chopped
- 5 potatoes, pared and diced
- 3 cups boiling water
- 3 tsp. salt
- 1/2 tsp. pepper
- 1 lb. fresh or frozen fish fillets
- 1 qt. milk, scalded
- 1 can (13 1/2 oz.) evaporated milk
- Fresh chopped parsley

Preparation
Step 1
Melt butter. Add the chopped onions. Cook over medium heat until golden. Add the potatoes, boiling water, salt and pepper. Cut fish into 1-inch squares. Place over potatoes. Cover and cook over medium heat 15-20 minutes. Add scalded milk and evaporated milk. Simmer uncovered for 5-10 minutes or until potatoes are tender. Sprinkle with chopped fresh parsley.
