Sour Cream Kuchen
Use apples, pears, peaches or whatever fresh fruit is in season.
- 1 Pkg. Yellow Cake Mix
- 1 Cup Sour Cream
- 8 Tbs. (1 Stick) Butter, melted
- 1 Large Egg
- 3 Cups Fresh Fruit, sliced apples, peaches, or pears
- 1 Tbs. Fresh Lemon Juice
- 1/2 Cup Sugar
- 1 tsp. Ground Cinnamon
Preheat oven to 350 degrees. Lightly grease and flour a 9 x 13 inch baking pan. Place the cake mix, sour cream, 4 Tbs. melted butter, and the egg in a large mixing bowl and mix with an electric mixer on low speed until the mixture just comes together into a thick dough, 1 minute. Using your fingertips, press the dough evenly over the bottom of the pan so that it reaches the sides. Bake for 10 minutes. Meanwhile, toss the fruit slices with the lemon juice in a large mixing bowl. Place the sugar and cinnamon in a small mixing bowl and stir until well combined. Remove the cake from the oven but leave the oven on. Arrange the fruit slices over the warm cake. Sprinkle with cinnamon and sugar mixture over fruit and drizzle the remaining 4 Tbs. melted butter over the sugar mixture. Continue to bake until it is golden brown and a toothpick inserted in the center comes out clean, about 30-32 minutes. Cool in pan on a wire rack to cool for 20 minutes. Serve while still warm.
