Ingredients
- Maple Chile:
- 6 slices thick-cut bacon
- 1/4 cup maple syrup
- 2 T each brown sugar and chile powder
- Pie Spice:
- 1/3 cup brown sugar
- 1 1/2 t. pumpkin pie spice
- 1 t. water
- Cumin-Peppercorn:
- 1/4 cup brown sugar
- 1 t. water
- 1 t. each cumin seeds, coriander seeds and pink peppercorns

Step 1
Read all instructions. The bacon is baked on one side first before adding seasonings.
For the Cumin-Peppercorn, Microwave the brown sugar and water until melted, about 1 minute. Brush on one side of the bacon, then sprinkle with cumin, coriander and peppercorns.
For the Maple-Chile: Mix the syrup and the brown sugar and chile powder in a small bowl. Brush on one side of the bacon.
For the Pie Spice: Microwave the brown sugar with pumpkin pie spice and water about 1 minute. Brush on sone side of the bacon.
Preheat oven to 375. Line a rimmed baking sheet with foil and set a rack on top.
Lay 6 slices thick-cut bacon the the rack in a single layer. Bake until they start to crisp, about 12 - 14 minutes.
Flip the bacon and top with your seasoning mixtures
Continue baking until browned all over, 12 - 16 minutes more.
Drain on paper towels.
