Ingredients
- 2 eggs
- 1 1/2 cups buttermilk
- 3/4 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1/4 cup cooking oil
- 1 1/2 cups sifted flour
- 1 teaspoon baking soda
Preparation
Step 1
Combine eggs, 3/4 cups of the buttermilk, and the remaining ingredients in blender container. MIX 30 seconds, or just until ingredients are mixed. Stop motor; stir with rubber spatula. Add remaining 3/4 cup of buttermilk. MIX 20 seconds or just until smooth. Pour batter onto hot, lightly greased skillet. Turn pancakes when edges are dry and top is full of bubbles. Brown second side.
