Sandwich: Club-Style Grilled Cheese
- 1 slice center-cut bacon or turkey bacon
- 2 wedges The Laughing Cow Light Creamy Swiss cheese
- 2 tsp. Hellmann's/Best Foods Dijonnaise
- 2 slices light bread
- 1 large tomato slice
- 5 spinach leaves
- 2 tsp. butter

Cook bacon until crispy, either in a skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook time.)
In a small bowl, combine cheese wedges with Dijonnaise, and stir until smooth.
Lay bread slices flat, and spread them with the cheese mixture. Crumble or chop bacon, and sprinkle over one slice of bread. Top that slice with tomato, spinach, and the other bread slice, cheesy side down. Spread the top of the sandwich with 1 tsp. butter.
Bring a skillet sprayed with nonstick spray to medium-high heat. Carefully place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.
Cook until bread is lightly browned and cheese has melted, about 2 minutes per side, flipping carefully.
