The Ultimate All-in Burger

Ingredients

  • Burger:
  • 1 large Vidalia onion, sliced 1/2" thick
  • 2 jalapeños, split lengthwise and seeds removed
  • 1/2 cup roasted peppers, medium dice
  • 5 slices thick-cut bacon, cooked and medium dice
  • 4 oz gorgonzola cheese, crumbled
  • 2 lbs ground beef
  • 1-1/2 tsp salt
  • 1 tsp black pepper
  • 1 Tbsp Montreal seasoning
  • 6 hamburger buns
  • Lettuce, tomatoes, pickles, etc., for optional toppings
  • Peppercorn-Ranch Sauce:
  • 1 pkg ranch dip mix
  • 16 oz sour cream
  • 3 Tbsp buttermilk
  • 2 Tbsp freshly ground black pepper

Preparation

Step 1

To prepare the burger patties, grill the onion slices and jalapeños in a grill pan or outdoor grill until softened and slightly charred. Let cool. Once cool, medium dice the onion and small dice the jalapeños.


In a large mixing bowl, gently mix together the onion, jalapeño, roasted peppers, bacon, and gorgonzola. Add the ground beef, salt, and pepper, then stir, being careful not to overwork the ingredients.


Form 6 patties, applying just enough pressure to hold them together without pressing too tightly. Season the outside of the patties with the Montreal seasoning.


To prepare the sauce, mix together the ranch, sour cream, buttermilk, and pepper in a small mixing bowl.


To cook and assemble the burger, start by grilling the patties to your desired doneness. Serve on a bun, topping each burger with a dollop of the peppercorn-ranch sauce and any other desired accompaniments.
