Mushroom Swiss Burgers

Ingredients

  • Large zip-top bag
  • 2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon olive oil
  • 1/4 teaspoon kosher salt
  • 6 oz whole portabella mushrooms
  • 3 tablespoons dry onion soup mix, divided
  • 1/4 cup light mayonnaise
  • 1 1/2 lb lean ground beef, 7% fat
  • 8 slices Swiss cheese (6 oz)
  • 4 Bakery hamburger buns

Preparation

Step 1

1. Preheat grill (or grill pan). Place in bag: soy sauce, oil, and salt; shake to blend. Discard stems and gills (dark brown layers) from mushrooms; add mushrooms to bag. Seal bag tightly and shake to coat mushrooms; let stand 10 minutes (or up to 1 hour) to marinate.

2. Combine 1 tablespoon soup mix with mayonnaise; set aside.

3. Combine beef and 2 tablespoons soup mix just until blended; form into 4 patties (wash hands).

4. Place mushrooms on grill; grill 3 minutes. Add burgers to grill. Turn mushrooms; grill 3–4 more minutes or until tender. Remove mushrooms from grill.

5. Turn burgers; grill 3–4 more minutes or until burgers are 145°F. Cut mushrooms into 8 equal slices. Place 2 mushroom slices and 2 cheese slices on top of each burger during last minute of grill time to melt cheese.

6. Spread 1 tablespoon mayonnaise mixture over buns. Top with burgers and assemble sandwiches. Serve.
