French Fries

Step 1

Chill french cut potatoes in bowl of ice water 10 minutes minimum, preferably 1 - 2 hours. Drain and dry well. Heat oil to 375. Fry potatoes for 5-8 minutes. Remove and drain. At this point they are blanched and can sit several hours until ready for final cooking. (Can be refrigerated covered up to 4 hours).

Increase oil to 400. Cook for the second time until crisp and golden, about 3 - 5 minutes. Drain and serve.
