Almond Crusted Halibut

Ingredients
- 3/4 cup white wine
- 3/4 cup sliced almonds
- 4 6-8 oz skinless halibut fillets
- 1/4 cup flour
- 2 eggs, beaten
- 3 tablespoons butter
- salt and pepper, to taste

Preparation
Step 1
Place a fry pan over medium heat and add sliced almonds. Mix well until toasty and aromatic. Remove from heat and set aside.
Season fish to taste with salt and pepper. Dust the halibut fillets with flour and then dip them in the beaten egg. Coat the fillets entirely with the toasted almonds.
Melt butter in a large saute pan over medium=high heat. Add the wine until it begins to bubble and then add fish to the pan. Cool for approximately 5 mintues on each side or until flesh is opaque and it breaks apart with a fork.
Serve immediately, topped with any remaining sauce form pan. This is delicious served with a leafy salad.
