Spicy Fried Beans

Ingredients

  • 1 pound tender green beans
  • 2 tablespoons oil
  • 1 medium onion, finely sliced
  • 1 teaspoon finely chopped fresh ginger
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 cup hot water
  • 1/2 teaspoon garam masala

Preparation

Step 1

Cut beans into bite-sized lengths. Heat the oil in a wok on medium heat, fry the onion, stirring frequently, until it is soft. Add the ginger and fry for a further minute or two. Add the turmeric, chili powder and salt. Add beans and toss to mix well; then add the hot water and bring to a boil Cover and cook on low heat for about 10 minutes or until beans are just tender.

Sprinkle with garam masala, mix well and cook for a minute longer. Serve with rice.
