Succotash

I never would have guessed that there would be a day that I would enjoy Lima beans, until I made this recipe. I sometimes will day dream about this succotash.

Ingredients
- 1 10 oz. packeage thawed
- 1 Tablespoon butter
- 1 teaspoon olive oil
- 1 small red onion, diced (1 cup)
- 1 clove garlic, minced (1 tsp.)
- 1 cupcherry tomatoes, halved
- 2 Tablespoons fresh parsley
- 2 Tablespoons chopped fresh basil
- 1 Tablespoons white balsamic vinegar
- (I've actually only used regularly balsamic vinegar for this recipe, and it's worked out great)
Preparation
Step 1
Heat butter in and oil in large skilletover medium heat. Addonion, and saute 5 to 7 minutes, or until it begins to brown.
Add garlic and cook 1 minute more.
Stir in thawed lima beans, and saute for 5 minutes.
Add corn and tomatoes, and saute 1 miute more, or until heated through, but tomatoes have not released their juices.
Remove from heat, and stir in parsley, basil, and vinegar.
Serve warm or chilled.
