Ingredients

  • 1/4 cup chopped onion
  • 3/4 cup frozen ground-beef-style soy crumbles (like the kind by Boca or MorningStar Farms)
  • 1/8 tsp. cumin
  • 1/8 tsp. chili powder
  • 1/8 tsp. garlic powder
  • 1 La Tortilla Factory Smart & Delicious Low Carb High Fiber Large Tortilla
  • 2 tsp. fat-free sour cream
  • 1 slice fat-free cheddar cheese
  • 3 baked tortilla chips, lightly crushed

Preparation

Step 1

In a microwave-safe bowl, microwave onion for 45 seconds, or until slightly softened.

Blot away excess liquid. Add soy crumbles, sprinkle with spices, and stir. Microwave for 1 minute, or until crumbles are hot.

Microwave tortilla on a microwave-safe plate for 10 seconds, or until warm.

Spoon soy-crumble mixture across the center of the tortilla.

In a small microwave-safe bowl, combine sour cream with cheese, breaking the cheese slice into pieces. Microwave for 15 seconds, or until hot. Mix well, until mostly smooth, and immediately spoon over the soy-crumble mixture.

Top with crushed chips. Fold in the sides of the tortilla and tightly roll it up around the filling.

Bring a grill pan (or skillet) sprayed with nonstick spray to medium-high heat. Place wrap in the pan, seam side down. Grill until lightly browned, about 2 minutes per side. DIG IN!
