PORK CHOPS & SCALLOPED POTATOES

Ingredients

  • 1 tablespoons butter
  • 1 tbsp vegetable oil
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons all-purpose flour
  • 1 (14.5 ounce) can chicken broth
  • 6 pork chops
  • 6 cups thinly sliced potatoes
  • 1 12oz bag of baby carrots
  • 1 dash paprika

Preparation

Directions
1. Brown pork chops in a tbsp. of oil on stove top high setting, Take them out and set aside.
2. Add 1 tablespoon butter over medium heat stovetop setting. Add salt, pepper and flour. Pour in the chicken broth, cook and stir until mixture boils (I used a silicone whisk).
3. Add potatoes, carrots and pork chops.
4. Sprinkle paprika on top.
5. Cook on stovetop high for 15 mins and switch to oven setting 350 for 30.
You could definitely do it in the crockpot. I would brown chops and add everything to the crock pot. Maybe add 1 tbsp more flour since the sauce won't reduce like cooking it on the stove top. I am also sure the #5 can be adjusted to just cook on oven setting for 45. I was in a hurry the day I tried it and just thought it would be safer to do the 15 mins stovetop high.
