Ingredients
- MARINADE:
- 1/2 cup finely chopped parsley
- 1/4 cup dark brown sugar
- 3 tbsp. oil
- 3 tbsp. soy sauce
- 1 tbsp. toasted sesame oil
- 2 large cloves garlic, minced
- 1 tsp. ground coriander
- 1/4 tsp. fresh black pepper
- SALAD:
- 4 cups mixed cabbage (white and purple )
- scallions,sliced
- 1 cup shredded carrots
- zest 1 lime
- 2 tbsp. fresh lime juice
- 3 tbsp. mayonnaise
- TACOS:
- 10 charred soft tacos
- 2 pounds thinly cut meat
- avocado
- cherry tomatoes
Preparation
Step 1
1. Mix all marinade ingredients. Set aside 1/4 cup of marinade mixture. Marinate meat .
2. Mix all salad ingredients into 1/4 cup reserved marinade. Add to cabbage, carrots, and scallions.
3. Cook meat on 425 for 10 minutes. Then broil till cooked.
4. To serve. Cut meat thinly , place on a taco, add salad and top with avocado and cherry tomatoes.
