Ingredients

  • 2 cups skim milk
  • 2 medium Yukon Gold potatoes, baked, halved (reserve one)
  • 1/3 cup lowfat shredded cheddar cheese
  • 1/4 small onion, peeled, chopped, sautéed
  • 1/2 teaspoon dill weed
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon salt
  • 2 ounces turkey bacon, crispy and crumbled

Preparation

Step 1

Place milk, 1 potato, cheese, onion, dill weed, rosemary and salt into the Vitamix container and secure lid. Select Variable 1.

Turn machine on and quickly increase speed to 10, then to High. Blend for 4 minutes or until heavy steam rises through the lid opening. Reduce speed to Variable 3.

Drop in remaining potato and bacon. Blend just until chopped. Stop machine. Serve immediately.
