Ingredients
- 2 cups chopped carrots
- 1/4 small onion, peeled
- 4 small garlic cloves, peeled
- 2 tablespoons oil
- 1/2 teaspoon salt
- pinch white pepper
- 1 tablespoon chopped fresh ginger
- 1/3 cup light silken tofu
- 2 cups low sodium vegetable or chicken stock

Preparation
Step 1
Place carrots, onion and garlic into the Vitamix container and secure lid. Select Variable 1.
Turn machine on and quickly increase speed to 4 or 5. Blend for 10 seconds or until chopped.
Put the oil into a small pan and sauté chopped ingredients until onion is clear and carrots are tender. Add a little broth, if needed. Place ingredients into the Vitamix container in the order listed and secure lid. Select Variable 1. Turn machine on and quickly increase speed to 10, then to High.
Blend for 3 to 4 minutes or until smooth
and hot. Serve immediately.
