Samantha Cupcake: Chocolate cake with chocolate frosting is decadent and indulgent, just like Samantha. Always the epitome of glamour, her cupcake is adorned with some gold dragees.

Ingredients

  • Cake:
  • 1/4 c butter, softened
  • 4 oz unsweetened chocolate, chopped
  • 2 eggs
  • 2 c sugar
  • 1/2 c water
  • 1/2 c brewed coffee
  • 3/4 c sour cream
  • 1 tsp vanilla extract
  • 2 c all-purpose flour
  • 1 tsp baking soda
  • Frosting:
  • 1/2 cup butter, cubed
  • 4 ounces unsweetened chocolate, chopped
  • 4 cups powdered sugar
  • 1/2 cup sour cream
  • 2 teaspoons vanilla extract

Preparation

Step 1

Cake:
1. Preheat oven to 350°. Line cupcake pans with liners
2. In a microwave-safe bowl, melt butter and chocolate; stir until smooth. Cool for 10 minutes.
3. In a large bowl, beat the eggs, sugar, water, coffee, sour cream and vanilla.
4. Combine flour and baking soda; add to the egg mixture and mix well.
5. Add chocolate mixture; beat on high speed for 2-3 minutes.
6. Fill cupcake liners 2/3 full.
7. Bake for 18-20 minutes or when a toothpick inserted into the cake comes out clean.

Frosting:
1. In a microwave-safe bowl, melt the butter and chocolate. Stir until smooth. Cool for 10 minutes.
2. With a mixer, beat in powdered sugar, sour cream, and vanilla on low until smooth
