Ingredients
- 1 cup flour
- 1/2 teaspoon salt
- 1 teaspoon dry mustard
- pinch cayenne
- 1 cup water
- 1/2 cup butter, cut in pieces
- 4 eggs
- 3 ounces gruyere cheese, finely diced
- 1 tablespoon finely chopped chives
Preparation
Step 1
Preheat oven to 400. Lightly grease 2 baking sheets.
Sift together flour, slat, mustard and cayenne.
In medium pot bring water and butter to boil over medium-high heat. Remove from heat and add the flour mixture all at once, beating with a wooden spoon until a ball forms. Return to heat and beat constantly 1-2 minutes to dry out. Remove and cool 3-5 minutes.
Beat 3 of the eggs into the dough, one at a time. If needed, beat the 4th egg in a small bowl and add a teaspoon at a time, beating until the dough is smooth and shiny and falls slowly when dropped from spoon. Stir in cheese and chives.
Drop small mounds 2" apart onto baking sheets. Beat the remaining 4th egg with 1 tablespoon water and brush tops with the glaze.
Bake @ 400 for 8 minutes then reduce temperature to 350 and bake 7-8 minutes more until puffed and golden. Remove to a wire rack.
Serve warm
