Sweet potato and spicy sausage soup

The spicy sausage plays well against the sweet of the potato.

Ingredients

  • 3 tblsp olive oil, DVD
  • 1 10-11 oz Portuguese or chorizo sausage, cut unto slices
  • 2 medium onions, chopped
  • 2 garlic cloves, minced
  • 2 large sweet potatoes, peeled, cut up into bite size pieces
  • 2 med potato, cut into bite size pieces
  • 6 cups chicken broth
  • 1 9oz bag baby spinach

Preparation

Step 1

In your soup pot heat 2 tblsp oil over med heat and brown sausage. Transfer to drain on paper towels. You may pour of some of the oil at this point. Add the onions and garlic to pot and cook until translucent. Add the potatoes and cook till softened slightly. Add the broth, scrape up browned bits, and bring to a boil. Cover and reduce heat to cook the potatoes till softened. Now use a potato masher, mash some of the potatoes in pot. Add the sausage and the spinach and cook till wilted. Add remaining olive oil to finish.
