Ingredients
- 1 cup mascarpone cheese
- 1 tsp vanilla extract
- 4 tbsp Kahlua liqueur
- 1 cup cold espresso coffee
- 1 cup heavy cream (35%), chilled
- 1/4 cup icing sugar
- 16 large lady fingers
- 1/2 cup cocoa powder
Preparation
Step 1
In large bowl of electric mixer fitted with whisk attachment, whip the cream on medium speed adding 1 tablespoon of the icing sugar once at time, until soft peaks form. Do not over beat as the cream will have the consistency of butter.
In another bowl of electric mixer fitted with whisk attachment, whisk together the mascarpone cheese, the vanilla and the Kahlua liqueur.
Fold the whipping cream mixture into the mascarpone mixture.
Pour the coffee into a shallow bowl.
Dip 8 lady fingers, one at a time into the coffee and place in a row on the bottom of a rectangular glass serving dish.
Spread half of the mascarpone mixture onto the coffe soaked lady fingers.
Sprinkle ¼ cup of the cocoa powder on top of the mascarpone mixture.
