Ingredients

  • 8 chicken tenders
  • 2 lrg eggs
  • 1/4 c milk
  • 1/2 c finely chopped pecans
  • 1/3 c cornmeal
  • 1/2 c all purpose flour
  • 1 tsp salt
  • 1 tsp onion powder
  • 1/2 tsp cayenne
  • 1/2 tsp pepper
  • 2 tbsp unsalted butter cut into small pieces

Preparation

Step 1

preheat oven to 425.
line a 9x13 baking dish with foil
rinse chicken with cold water & pat dry
whisk together eggs & milk
in a 2nd bowl combine remaining ingredients
dip chicken & place in baking dish, dot with butter, bake until golden brown, about 1 hour & 15 minutes.
