Buttermilk Biscuits

Ingredients

  • 2 C all purpose flour
  • 1 T baking powder
  • 3/4 t salt
  • 1/2 t baking soda
  • 5 T chilled solid vegetable shortening
  • 1 C buttermilk

Preparation

Step 1

Preheat oven to 425

In a large bowl, sift together dry ingredients

Cut in shortening until coarse crumbs form

Add buttermilk tossing with a fork until dough forms

Turn out onto a lightly floured surface. Gather into a disk and knead lightly a few times just until smooth. (The dough can be made up to 2 hours ahead, wrapped in plastic and refrigerated until ready to use.)

Pad the dough to 3/4 inch thick. Using a biscuit cutter, cut out biscuits. Place biscuits 2 inches apart on an ungreased baking sheet. Gather dough trimmings, pat into 3/4 inch and cut out more biscuits.

Bake until biscuits are golden 12 to 15 minutes and serve hot.
