roasted tomatos with shrimp & feta

Ingredients

  • 5 lrg tomatos
  • 3 tablespoons olive oil
  • 2 tablespoons minced garlic
  • 3/4 tsp salt
  • 3/4 pepper
  • 1 1/2 lbs medium shrimp peeled & deveined
  • 1/2 c chopped fresh parsley
  • 2 tablespoons lemon juice
  • 1 c crumbled feta

Preparation

Step 1

preheat oven to 450. place tomatos in a lrg bakin dish. spoon olive oil and garlic over tomatos. sprinkle with salt & pepper & toss. palce on top rack of oven & bake for 20 minutes. remove baking dish from oven & stir in the shrimp, parsley & lemon juice. sprinkle with feta. place back in oven for another 10-15 minutes or until the shrimp are cooked. serve warm with crusty bread.
