Ingredients
- 1 stick softened butter
- 1 C sugar
- 2 large eggs
- 2 large ripe mashed bananas
- 2 C all purpose flour
- 1 t salt
- 1 t baking powder
- 1/2 t baking soda
- 1 C butter milk
- 1/2 C chopped pecans (optional)
- 1 t vanilla extract
Preparation
Step 1
Preheat oven to 400
Grease 12 standard muffin pans or use paper liners.
Beat together butter and sugar on medium speed until light and fluffy. Add eggs one at a time beating well after each addition. Beat in bananas until smooth.
Mix together dry ingredients
Alternately stir flour mixture and buttermilk into egg mixture until dry ingredients are just moistened.
Stir in nuts and vanilla. Do not overmix batter, it should not be completely smooth.
Spoon batter into prepared pans filling 2/3 full. Bake until lightly golden 15 to 18 minutes, transfer to wire rack to cool.
